Starbucks Inspired Ginger Molasses Cookies
If you know me, you know that I love Starbucks. Aside from vanilla lattes and earl grey tea, I am also highly obsessed with their ginger molasses cookies. A while ago when they decided to discontinue them, I was heart broken. I’m not even exaggerating. But instead of moping and going through cookie withdrawals, I decided to go on a hunt for the best ginger cookie recipe so I can make them myself!
This was a win-win situation, as this obviously helped the budget a great deal. If you’ve ever had a Starbucks cookie you know they are not the cheapest (although well worth it to me). Even though fate brought them back to Starbucks stores, I still try to make them myself to alleviate the costs and share with my family.
I tried a few different recipes to find the closest thing to Starbucks, and so I wanted to share with you the recipe that I love!

The recipe also recommends putting the dough in the fridge for a bit for an extra chewy cookie which I find helpful and makes the dough easier to roll.
